In a modern and relaxing environment, you are invited to enjoy dishes prepared in our kitchen using local products such as Fassone Piemontese veal and seasonal vegetables grown by the certified organic farm Le Nuove Rotte. Our cold cuts and cheeses come exclusively from artisanal producers in the province of Cuneo, accompanied by a carefully selected range of organic beverages, including wines and beers. For the little ones, we offer fruit juices and soft drinks.

A bottle with friends, a glass of sparkling wine for an aperitif, a snack, a plate of *tajarin* with meat ragù, a traditional appetizer, or even a good coffee—these are all great reasons to stop by Le Vigne Bio.

History and Philosophy

The wine shop and osteria “Le Vigne Bio” was born from the long tradition of Severino Oberto in the world of organic wines. A former co-owner of the Erbaluna farm in La Morra and a certified oenologist since 1985, Severino converted his family business to organic farming, obtaining certification in 1993 as one of the first in Italy.

After 25 years of experience working in the winery, vineyards, and international fairs, in 2011, he founded “Le Vigne Bio.” Initially established as a wine shop and bar combining excellent organic wines with cured meats, cheeses, and regional dishes, the venue was transformed into an osteria with a full kitchen in 2022.

The staff, consisting of an all-female kitchen team and motivated young front-of-house members, creates a welcoming atmosphere, offering a unique and satisfying food and wine experience.

Vitello Tonnato €11
Our Vitello Tonnato is a dish that combines tradition and quality. We use the finest veal eye of round, carefully selected from Agrimacelleria Pavaglione. The meat, free of fatty parts, is slow-cooked at a low temperature overnight, preserving its characteristic pink hue and ensuring a tender, juicy texture. The tuna sauce is an artisanal interpretation, made with carefully selected ingredients. The eggs come from Azienda Agricola Bio Mana, a local producer that guarantees freshness and quality. We prepare the sauce by hand, following a traditional recipe that blends mayonnaise, high-quality tuna, capers, and a delicate touch of organic apple cider vinegar, resulting in a creamy and flavorful accompaniment.
Anchovies in Green Sauce €11
Anchovies in Green Sauce is a simple yet flavorful dish, perfect for those who appreciate Piedmontese culinary tradition. The anchovies, carefully selected for their quality, are desalted and paired with a fresh dressing made from parsley, garlic, capers, vinegar, and extra virgin olive oil. This combination gives the dish an intense aroma and a vibrant taste. An ideal appetizer that balances the savory richness of the anchovies with the freshness of the green sauce, creating a perfect contrast of flavors.
Tajarin al ragù €13
Our tajarin, prepared according to tradition with an impressive 30 egg yolks per kilogram of flour, are incredibly rich and have a deep golden color. Each strand of pasta is a concentration of tradition, perfectly absorbing the ragù, which is made following an ancient Piedmontese recipe. The ragù, slow-cooked with passion for many hours, is a rich and flavorful sauce that combines carefully selected beef from Agrimacelleria Pavaglione, red wine, herbs, spices, and a touch of tomato purée. The result is a deep, enveloping flavor that perfectly complements our handcrafted pasta.
Capocollo brasato €15
Our beer and honey-braised capocollo is a dish with a bold and enveloping flavor. The meat is marinated in craft beer, then slow-cooked at a low temperature and finished with a touch of honey. The result is a succulent and tender braised dish, perfectly paired with a creamy mashed potato purée. All the vegetables, legumes, and beer used in this dish come from Azienda Agricola Nuove Rotte, which follows biodynamic farming principles, adding flavor, authenticity, and love to our cuisine.
